Once the onions are ready, add 3 finely chopped tomatoes, a 2-inch piece of ginger, and one green chili. Cook until the tomatoes soften and become mushy.

Now, add the dry spices-2 teaspoons of red chili powder, 1-2 tablespoons of coriander powder, and salt to taste. Let the spices cook on low flame until the oil begins to separate from the masala. This is the stage where the flavors intensify, and the aroma becomes even more inviting.

Once the masala is ready, add the mashed turnips to the kadhai and mix everything together. A teaspoon or two of sugar is added to balance the flavors and enhance the sweetness of the turnip. Allow the mixture to cook for another 5-7 minutes to ensure the flavors fully combine.
