A viral Instagram video highlights a unique regional twist: Ratalu Bhajiya (purple yam fritters) from Gujarat’s Surat.
The video captures a vendor expertly preparing this delicacy. He begins by peeling a ratalu and slicing it into thin, long purple strips. Next, he prepares a besan (gram flour) batter, adding salt and mixing it by hand. The yam slices are then dipped into the batter and sprinkled with the vendor’s signature “special masala.” They are deep-fried to golden perfection in hot oil. Since being shared, the video has garnered almost 3 million views on Instagram. “Yum,” a user commented.
